Can't Manage Categories

Hi all,  I started setting up my site a couple of weeks ago.  At that time I set up some categories which blog posts would be put under.  Today I've tried to add more categories but I just cant find how to do it.  I've spent 45 mins clicking through every single menu and every page.  I've looked through the knowledge base and after getting fed up my wife looked for 30 mins and couldnt find how to do it either.  It's probably someyhing glaringly obvious but I cant work it out.  Can you help?

    Check this video out and see if it helps you any. The categories element is the same for all features, so the fact that this is for the downloads page shouldn't matter much. I made this for my site Spruzstuff awhile back.

    How do I add an item to more than one categories?

    Thanks - I had to add the Categories element to a page in order to edit the categories themselves.
